Tiny brewer join craft scene
Side Lot Brewery held a grand opening last weekend at its new 60-seat brewpub in downtown Wauconda. The brewery and cidery, which so far is selling its creations only on site, debuted with three beers–a pale ale, a Belgian tripel and an English mild brown ale–and two ciders, one slightly sweet, the other dry.
Side Lot, which has four 42-gallon fermenters with plans to bring in more this year, is led by head brewer and managing partner Phil Castello, a freelance broadcast media producer and editor who has worked for NBC Universal and Comcast SportsNet. His partners are Jason Vucic and Brittney Barth.
Side Lot also serves house-made craft sodas, coffee, wine and spirits along with small plates that include “Bacon Jam,” which blends brie cheese with sweet and spicy bacon paired with crostini.
